Our cheese selection is sourced from Europe’s finest affineurs and South Australia’s best local producers. From soft-ripened French classics to bold washed-rinds and mature hard styles, every cheese is served at its peak. Edward Rava
Bar Manager & Wine Director
Ed studied Viticulture & Oenology at the University of Adelaide and builds our cellar, our by-the-glass list, and our cheese and charcuterie program, working directly with the growers and makers behind every bottle.
Grace Douglas
Winemaker in Residence
Grace has worked as a head winemaker and consultant winemaker in South Australia and Victoria, bringing her expertise into the heart of Adelaide’s East End, connecting wine, terroir and cheese.
Darian Sarellano
Second in Charge
Darian came to Adelaide from California, where they worked harvest and cellar at Kenneth Volk Vineyards and managed the tasting room at Riverbench in the Santa Maria Valley, a producer known for Burgundian Pinot and Chardonnay. A gracious host with an encyclopaedic knowledge of wine regions, they make every guest feel expected rather than merely accommodated.
